Fried rice with shrimp and BACON!

Has it been a while since my last Filipino food experiment? I suppose its because I really wanted my next attempt to be kare-kare, but I’m not quite ready yet. So Trinity made the choice — we had shrimp in the freezer, so we tried fried rice with shrimp and Chinese sausage. Except, we couldn’t find Chinese sausage at our Agoura Hills supermarkets (which would be more likely to have matzo balls and stuff). The recipe allowed for bacon as a substitution, so there you have it — fried rice with BACON!

A few notes — I estimated 9 pieces of maple smoked bacon for two Chinese sausages. I cooked the rice fresh (and didn’t even realize my little rice cooker could hold that much rice), but the recipe says day-old rice is best. We don’t have a wok, so just used our deep pan. And, since we forgot to buy soy sauce, we improvised with soy sauce packets. Seriously — did you know that one Kikkoman packet equals about a 1/2 tablespoon?

Anyway, the experiment seemed to work out pretty well. I know I’m full. And Trinity kept quiet as he ate, which is a sure sign of satisfaction.
